Hành lá phần củ bằm nhuyễn, phần lá cắt mỏng. Tôm lột vỏ, dùng bảng dao lớn đập cho tôm hơi dập rồi ướp với 3 muỗng cà phê nước mắm, 2 muỗng cà phê đường, 2 muỗng cà phê bột súp gà và 1 muỗng cà phê hành tím băm trong khoảng 10 phút.
Khổ qua rửa sạch, cắt làm đôi, bỏ hột, bào mỏng.
Phi thơm 1 muỗng cà phê hành tím băm với 1 muỗng canh dầu ăn, cho 2 muỗng cà phê nước mắm, tôm vào trộn đều khoảng 3 phút cho tôm vừa chín. Múc tôm ra tô, chừa nước lại
Cho vào nồi vừa xào tôm 2 lít nước, 1 muỗng canh muối, 2 muỗng canh đường và 2 muỗng canh bột súp gà, đun sôi.
Khi nước canh sôi đều, cho khổ qua vào trộn đều một lượt
Khi canh vừa sôi trở lại, cho tôm vào nồi canh, trộn đều, tắt lửa, cho hành lá vào nồi canh.
