Việt quất rửa sạch để ráo. Cho 150g đường và 100ml nước vào nồi, đặt trên bếp vừa đun vừa khuấy cho đến khi đường tan hết thì bắc ra, đổ 3/4 nước đường vào 1/2 số việt quất tươi, trộn đều rồi đem đặt trong tủ lạnh để làm mát.
Đối với số việt quất còn lại, lăn qua đường còn lại cho đường bám hết vào trái. Sau đó để riêng ra một cái chén để lát nữa trang trí lên rau câu.
Cho 3 muỗng cà phê bột bắp, 1/4 muỗng cà phê muối, 1/2 muỗng cà phê vani và nước đường còn lại vào chén, khuấy đều. Sau đó cho 1 lòng đỏ trứng gà vào trộn cùng.
Đun ấm sữa tươi, sau đó đổ hỗn hợp bột trên vào trộn cùng, thêm 250g chocolate chip vào rồi đun liu riu trên bếp, đến khi hỗn hợp sánh lại, mịn và nhuyễn thì bắc ra, để nguội rồi rót vào ly, để nguội rồi cho vào trong tủ lạnh.
Khi ăn, chỉ cần xếp 2 loại việt quất đã làm lúc nãy lên trên ly rau câu là hoàn thành món rau câu chocolate việt quất rồi đấy!
