Cá thác lác rửa sạch, để ráo nước, lột da, lấy muỗng inox nạo thịt vào thố. Bạn có thể mua sẵn thịt cá thác lác ngoài chợ. Hành tím băm nhỏ, thì là, hành lá rửa sạch.
Cho thịt heo bằm, cá thác lác, thì là, hành lá cắt nhỏ, hành tím vào tô. Nêm 1 muỗng cà phê hạt nêm, 1/2 muỗng cà phê tiêu vào, quết dai, để trong khoảng 15 phút.
Đổ một chút dầu ăn ra chén. Thoa dầu vào hai lòng bàn tay. Xúc từng muỗng cá cho vào lòng bàn tay rồi viên tròn. Dùng hai bàn tay ép cho viên cá xẹp mỏng xuống.
Làm nóng dầu ăn trong chảo, cho chả cá vào, chiên nhỏ lửa vàng đều 2 mặt. Chả cá chín, gắp ra đĩa chấm cùng tương ớt rất ngon.
